A premium, authentic fermented plum vinegar drink crafted by Maruno Yamagata in the Shonai region of Yamagata Prefecture, Japan.
Unlike standard plum pickling juices, this product is uniquely crafted by fermenting whole regional "Obako Ume" plum extracts through actual acetic acid fermentation.
The resulting vinegar is then carefully aged for two full years to achieve maximum mellowness.
This rare and valuable formulation requires approximately 600 grams of fresh, locally harvested plums to produce a single standard batch.
