Produced by Nitanda Shoyu, a historic brewery in Nakatsu, Oita, with over 100 years of tradition. This premium Shiro Dashi is a sophisticated light colored soup base crafted by blending extra light soy sauce with fish sauce. We enrich this base with a traditional dashi of bonito, kelp, and shiitake mushrooms, staying true to our artisanal brewing heritage.

This concentrated broth allows you to add profound flavor to your dishes while maintaining their beautiful, natural colors without darkening the ingredients.
Culinary Magic
An essential, multi-purpose base for professional-grade cooking. As this is a concentrated broth, we recommend diluting it with 8 to 10 parts water. It is ideal for clear soups, udon or soba noodle broth, and dipping sauces for Tempura. It also serves as a perfect seasoning for hot pots or for simmering vegetables where you want to preserve their vibrant, natural appearance.
